❤️WHY WE LOVE THIS RECIPE
This dip gets better with time, so we love that we can make it in advance. We make it the night before and enjoy it on New Years Day. Since it has black-eyed peas in it, its perfect for that time of year. It’s also a cold dip so it’s great in the summer months!
SWAPS
We use Rotel tomatoes with green chilis in this recipe. You can use a can of diced tomatoes and add some jalapenos for heat. We prefer it not to be hot. If you are not a fan of cilantro, leave it out. You can also switch up the corn and use white corn or Mexican corn if you like.
CAN I USE FROZEN CORN?
Yes, you can use frozen corn. Just make sure it is thawed first, and then add it to the salad.
⭐TIP
We love this dip with tortilla chips but some have said pita chips are wonderful too. The longer it’s in the fridge, the better it is. You can always add more Italian dressing if you feel it needs it.

This Cowboy Caviar is made with Black-Eyed Peas and Italian Dressing and always a hit. Perfect for any gathering.
- 1 (15.5 ounce) can black beans, drained
- 1 (15.5 ounce) can black-eyed peas, drained
- 1 (10 ounce) can Rotel tomatoes with green chilis, drained
- 1 (15.25 ounce) can of sweet corn, drained
- ½ medium onion diced
- ¼ medium green bell pepper finely chopped
- ¾ cup chopped cilantro
- ½ cup chopped pickled jalapeño peppers
- ½ teaspoon garlic salt
- 1.5 cups Italian salad dressing
The longer it’s in the fridge the better it is. You can add more Italian dressing if you need.
